Veg Tahiri – Vegetable tehri (or tahiri, tahri, tahari ) is an aromatic, delicately spiced one-pot dish of yellow rice & mixed vegetables, a popular Awadhi recipe from Uttar Pradesh.
Whole spices, vegetables (specifically potatoes, cauliflower, peas & carrots along onions & tomatoes ) raisins (kishmish), ginger-garlic paste and rice are sautéed together and then cooked in a pan or cooker until cooked through and the rice is fluffy.
Tehri became more popular during the Second World War when meat prices increased substantially & potato became the popular substitute in biryani.
Vegetable tahiri is ideal for a week day lunch. It’s the perfect go-to dish when you are in a hurry, or don’t know what else to cook.
Veg tahiri is so hearty and satisfying that it does not need any side dish, but should be served with green chutney, papad, raita, and salad as accompaniments.
