This easy pasta recipe can be your super quick lunch or dinner when there’s no time to cook.
In Italy, they make a pasta called, *aglio e olio* , which means pasta with olive oil and garlic. A few simple ingredients like pasta, olive oil, garlic, and Parmesan is all that you need to make this.I have made the addition of cherry tomatoes, basil leaves & coriander leaves & some dried herbs to it.
Long pastas like Spaghetti, fettuccine, linguine, or bucatini are generally used in this type of pasta.But trust me its good with any pasta, you have in your kitchen.I had some elbow macaroni with me, so I have used that.
So here we go : Bring a large pot of water to a boil. Toss in the pasta (200 gms) and cook until al dente, drain.Reserve half a cup of pasta water.
Warm olive oil in a pan over medium low heat. Add in 3 cloves of chopped garlic and let it cook until soft . Add in the cherry tomatoes about 15-20 of them (halved or whole).Saute for a minute.Add the boiled pasta, some grated cheese (Parmesan or Mozzarella, Indian ladies of the house, in case you don’t have a fancy cheese at hand, use 2 cheese slices instead) half of the pasta water you saved, salt ,black pepper, coriander & basil leaves .Season with salt, pepper, chilli flakes, oregano or any other herb .Toss well & serve.Enjoy with your favourite drink !
