Thai Basil fried rice – (vegetarian & vegan version)Made these yummy Thai basil fried rice last week.It was loved by everyone at home.
Ready in a jiffy, its a minimal ingredient dish, that can be quickly made even on a busy week day.
So here we go.Make the sauce by whisking together teriyaki sauce (I used teriyaki sauce as I ran out of my oyster sauce), light soy sauce, dark soy sauce, & a pinch of sugar in a bowl.
Now heat a large wok & add a tbsp of oil. Saute 2 sliced onions for 2 minutes & then add minced garlic (6-7 cloves) and chopped Thai red chillies or the red chillies that are available with you & stir-fry for a few seconds.
To this you can add pan seared tofu .I have done a variation here & used cottage cheese, instead of tofu (it turned out very yum).Now add 3 cups of boiled rice (leftover ones are the best to use here) along with the prepared sauce.Now press the rice to mix well with all the ingredients.Add a whole bunch of fragrant thai basil leaves (mine are home grown 😊) & allow them to wilt. Squeeze some lime juice & serve warm along with some freshly cut cucumbers.Enjoy.
