Spinach & Corn Au Gratin is a classic French dish.Sweet corn and spinach are brought together with a cheesy and creamy bechamel sauce, topped with a layer of grated mozzarella cheese & is baked.Its a vegetarian dish & a good way to eat spinach.

So here we go : Heat oil in a pan, add chopped garlic (3 to 4 cloves) & saute for 30 seconds. Add in washed & chopped spinach (300 grams) & allow it to wilt. Add the steamed sweet corn (1 cup ) into the spinach. Now add a pinch of black pepper & little salt ( remember we are adding cheese later so either avoid salt at this stage or just add very little) & switch of the flame.You may add herbs like oregano at this stage.

Preheat the oven to 180 degrees Celsius .

Now make the béchamel sauce . Heat a tbsp of butter in a pan on medium heat. Once the butter has melted completely, add in the refined flour ( 2 tbsp) and sauté for 50 seconds. 
Now add a cup or more of milk & mix continuously. Continue to whisk until thick on low heat.

When the sauce is beginning to thicken, ( you can add some cream cheese to this sauce, its optional ). Add salt to taste after tasting the sauce .Add black pepper.Add spinach and corn to the béchamel sauce.

Transfer the mixture to a baking dish. Sprinkle the grated mozzarella (1/2 cup) cheese evenly on the top.

Place the baking dish in the oven and broil for 12-15 minutes or until the cheese melts and has turned light golden brown.Enjoy !
