Reshmi Paneer/Cottage cheese –

Bored of your regular paneer curries, try this creamy & spicy paneer curry. Paneer is tossed in a medium spicy curry with capsicums and onions. Ideal curry to go with all Indian flatbreads; garlic naan, parantha & tandoori roti.

So here we go – Heat oil in a pan, saute 1 sliced onion, a tsp & a half of ginger garlic paste.Add one (thinly sliced) capsicum, & a chopped tomato & saute for a minute. Do not overcook, & keep aside.In the same pan heat 1 tbsp butter and add 1 tsp cumin.Keeping the flame on low, add all spice powders; turmeric powder, chilli powder, coriander powder & cumin powder. Saute until the spices turn aromatic.

Now add one & a half cup of tomato puree and cook well.Add ¼ cup cashew paste and saute on medium flame.Cook until the mixture thickens and oil separates.Add 1/2 cup of water & salt to taste. Mix well, adjusting consistency as required.Time to add in sauteed onion, capsicum and tomatoes along with 300 gms of cubed paneer. Mix gently without breaking paneer.Add in 1 tbsp cream (or more, if you like) and mix gently.

Simmer until the flavours are absorbed well.Add ¼ tsp garam masala & coriander leaves mix well.Enjoy !
