Jackfruit Katsu – Jackfruit is said to be the largest tree-borne fruit in the world, with some of them weighing as much as 36 kgs. Jackfruit is just like a magical fruit which fills our body with all sorts of awesome healthy nutrients.It prevents cell damage, cancer & cardiovascular diseases.Jackfruit enhances vision, prevents ageing & even lowers blood glucose levels.It has been rightly given the tag of a superfood.
Here’s an interesting way to include it in your diet.Not only will the vegans love this recipe, the meat eaters will also find it quite delicious.
So here we go : 1) Put around 250 gms of peeled, washed, cut & deseeded jackfruit in a bowl of boiling water.(water should not be excess, it should be just enough for the Jackfruit to absorb it).Let it become nice & tender.Cool it & mash it well.Add salt to taste & pepper & mix well. Take a small quantity of this & give it the shape of a cutlet.Follow the same with the remaining jackfruit.
Take around 2-3 tbsp of cornflour, one beaten egg (vegans can omit the egg) and 3 tbsp of panko crumbs into separate shallow dishes. Coat the cutlet with the flour, shaking off any excess. Dip it into the egg, and then press into the panko crumbs until well coated on both sides.
Heat 1/4 inch of oil in a large skillet over medium-high heat. Place jackfruit in the hot oil, and cook 3 or 4 minutes per side, or until golden brown.Jackfruit Katsu is ready to be enjoyed.
