EFR, or Egg Fried Rice; a delicious dish that comes to our rescue, when we want a healthy meal in a jiffy .
It has many versions & many recipes.The one that I am sharing is the minimal ingredient, chinese style EFR.Fast to cook & good to eat, it surely is a must try recipe.
In a small bowl, crack 2 eggs (or more if you like) and whisk with a fork until smooth.
Heat your wok over its highest heat. When the wok is fully heated, add ½ tbsp of cooking oil, swirling it around the sides of the wok until it reaches smoking-point. Then, carefully pour the eggs into the centre of the wok, bringing the heat down slightly & slowly moving the eggs around the pan ensuring they don’t burn.
Now push the egg to one side of the wok to allow space for your rice, add another 1⁄2 tablespoon of oil and bring it back to a high heat .Add 2 cups of cooled boiled rice (a day old boiled rice are preferred) to the wok and mix well with the egg. Now add a handful of pre- boiled & cooled peas and continue to stir-fry for 1 minute.Pour 2 tbsp of light soy sauce (no need to add any seasonings including salt) and half a tbsp of sesame oil over the rice, turning the heat down slightly and stir-frying until the rice has absorbed all the soy sauce and become drier. Should take about 1 minute.
