Delicious rich & creamy this Paneer recipe is a variation of Shahi Paneer.
It also uses onions & yogurt apart from tomatoes .
Shahi Paneer is the speciality of vegetarian north Indian cuisine & is made in several ways .
So here we go – Heat oil in a pan, add bay leaves & green cardamom, allow to crackle.Now add 2 roughly chopped onions, 3-4 cloves of garlic , an inch of chopped ginger.Cook till onions are golden brown.
Add a few cashew nuts, and chopped tomatoes (atleast 3 of them) along with powdered spices, turmeric, kashmiri chilli powder, coriander powder, garam masala.Mix well & cook the masala for 3-4 minutes.
Now add 2 tbsps of yogurt, mix well and add some water.Now cook on high flame for 5 minutes.
On cooling, remove the whole spices & blend to a fine puree.Now heat oil & add the pureed curry, salt to taste, water as per the consistency desired and then add cubes of cottage cheese/paneer (300 gms).Cook for 5- 7 minutes and finish with some low fat cream .Enjoy with any Indian style bread ; roti, parantha, naan .
