Chicken in hot garlic sauce – So here’s the recipe as promised .
Step 1) Preparing the sauce & the slurry a) Sauce – In a bowl mix well – dark soy sauce about 2 tsp, a tsp or more of sugar, 2 tsp of vinegar, 1-2 tsp of any good chilli sauce.You can also add tomato ketchup if you like, but in that case reduce or omit the sugar that you are adding.
To prepare corn flour slurry, in half a cup of water dissolve one and a half tbspoon of cornflour.
Now take oil in a wok, saute 1 tbsp of finely chopped garlic and half a tsp of grated ginger.Add 2 whole red chillies, saute a bit add one small chopped onion.Saute well for 3-4 mins.
Now add 400- 500 gms of boneless chicken ; diced.Saute the chicken, till its nearly done.Add the vegetables of your choice & saute them well, make sure they stay crunchy.
Add salt & black pepper. Now add the sauce prepared.Mix well.Add half a cup of water.Now add the corn flour slurry dissolved earlier.Mix well, add more water if you think curry is too thick, give the curry a boil.Balance the sweet, sour and saltiness .Switch off the flame, garnish with green parts of spring onions and serve hot with boiled rice.Enjoy.
