Bengal Gram, also known as dark brown peas or black chana, is widely regarded as an important pulse, owing to its nutritional properties. It contains a good amount of iron, sodium and selenium in addition to small doses of manganese, copper and zinc. A handful of Bengal gram is a very good source of fibre and folic acid.Bengal gram helps increase the total energy in the body, which is why it is fed to horses too.
So its an excellent option for breakfast to keep you energised through the day & a great snack that will keep you satiated for long.A boon for Vegans I would say.
While there are many ways to consume it.I sometimes make it South Indian style.
So here we go -Wash & soak 200-250 gms of Bengal grams overnight.Next morning boil it in a pressure cooker, till they are nice & tender.Allow to cool .Fish out the chanas from the water.You can use the chana water as a healthy soup, or in curries or even in making of any dough.In a pan, heat some ghee, add mustard seeds & allow to splutter.Now add a handful of curry leaves.Then add half a tsp of garlic & green chillies minced together (its optional, can use 2-3 cloves of garlic & 2 green chillies).Saute for a few seconds & add chopped onions (2 of them) .Let them turn nice & golden, now lower the flame & add powdered spices (cumin, corainder, turmeric, red chilli ) & salt to taste, quickly add boiled & strained black chanas (don’t let the powdered spices burn).Mix well & cook till chanas have absorbed all flavours. Serve hot.
