Beans & carrot Poriyal – Poriyal is the South Indian equivalent of a stir fry.Beans, carrots, cabbage & many other vegetables can be made into a Poriyal.Its super quick to make, very mildly spiced so vegetables retain both, their crunch & their taste as the taste is not overpowered by spices.
So here we go ; Steam finely chopped carrots and beans using a steamer or pressure cooker, transfer to a bowl & keep aside .
Heat a tbsp of oil in a pan & add mustard seeds and allow them to crackle, add 1 tsp of urad dal (white lentil) and fry till urad dal turns light brown in color.Add a handful of curry leaves.Now add a small chopped onion & saute for a few seconds. Now add the steamed carrots and beans.
Add salt to taste , (you can add some turmeric as well, but its optional )& stir-Fry the vegetables for a few seconds on high heat.
Add grated coconut & cook for a few seconds. Serve hot as a side dish with any Indian meal.
