Baby corn bell pepper fry– A vegan, gluten free and super yummy dish.
Serve it as a snack with drinks or simply as a side dish.
So here we go – Cut each washed baby corn ( about 200 gms of them ) vertically into 2 pcs .Blanch them and allow them to cool & dry. Combine baby corns & a tbsp cornflour in a bowl.Season with salt & pepper.Do not add water.Mix well & deep fry or shallow fry whichever way you like.Keep the fried babycorns aside.
Take oil in a pan, add minced garlic (3-4 cloves), saute a bit, add chopped onions & diced green bell peppers, saute a bit, now add sliced mushrooms, saute till everything turns a bit soft but still crunchy.Keeping the flame high, quickly add, fried baby corns, salt to taste, black pepper, some chilli flakes & a dash of chilli powder or paprika.Finish with a tsp of lemon juice or vinegar .Mix well.Garnish with greens of spring onions & serve hot.Enjoy with your favourite drink .
